I have the same issue with headphones on my iPhone X. Just started a couple of days ago.
- Turn on music - Spotify or YouTube
- Lock screen & put the phone in my pocket
- Music randomly pauses
- My music keeps pausing by itself! The volume bar is still there but it justs keeps pausing over and over again. On about the 3rd time it pauses i have to take the headphones out and put them back in to get the volume bar back and then it goes right back to what it was doing.

I thought it was the headphone adapter, but hearing your issue after switching headphone types, now I'm not so sure which is worrisome.
Spotify Keeps Pausing On Iphone
If I don't find a fix I'm going to have to see if I can trade-in my phone. Having music is a critical feature.
